As a surgeon, he was doing little to prevent disease in the next unsuspecting victim.
Surgery could save lives, but it was not stopping the progression of disease. After careful research and study, Dr. Esselstyn began to notice that the problems that plagued his patients in the US weren’t universal.
So, he began to look at the causes of these diseases.
The fact was that many cultures around the world that consumed a plant-based diet had much lower rates of heart disease and cancer than Americans.
He and his wife, Ann Crile Esselstyn, soon adopted a plant-based diet, and Dr. Esselstyn began implementing it as a treatment with a small group of patients in a landmark study.
